LEVEL 1
Preparation of a fruit cake and cooking instructions. Almonding and covering a cake. Basic piping skills, Australian wildflower spray, writing and basic cake design.
LEVEL 2
Jelly work, flood work, brush embroidery, marzipan modelling, ribbon insertion, Bas relief and Garrett frill.
LEVEL 3
Basic sugar flowers including Roses, Carnations, and Orchids, using hand-moulded techniques and cutters, and wiring of sprays.
LEVEL 4
Advanced piping and cake design. Lace, drapes, flowers and leaves.
LEVEL 5
Create a two-tier wedding cake using your choice of shape and design, incorporating bridge and extension work with lace.

Fees for each level of the comprehensive decorating course are payable in advance,
with a non-refundable deposit payable on enrolment.
Classes are held in the evenings on Mondays to Thursdays
7.00 - 9.00 PM I night per week
Equipment Kits are available on the first night of each class for Levels 1-4,
and contain the necessary equipment needed to learn the skills for that level.
The cost of each kit is not included in the fees. (Course costs are available on request )
Students receive a certificate upon satisfactory completion of all 5 levels.
Further your flower-making skills in our advanced class. Learn the different techniques needed to create lifelike flowers including Azaleas, Lilies, Gerberas, and more. We show you what tools to use, how to colour your flowers, and how to arrange them in a variety of ways.

Certificate awarded upon completion of both levels.
Learn how to use chocolate with confidence and create cakes to tempt the taste buds. The course covers chocolate collars and bows, Petit Fours, chocolate boxes, flowers made using chocolate modelling paste, a Croquembouche and even a Wedding cake.
